Tebay South Kitchen Stations Project
Project Introduction
As shared in previous papers, Tebay Southbound's kitchen was increasingly unable to meet customer demand during peak periods:
- The aging infrastructure and outdated service model led to a decline in conversion rates during key trading days from 35% to 31% as customers often faced long queues and delays.
- The existing layout funnelled all visitors through a single till and coffee point, creating bottlenecks and negatively impacting the overall customer experience.
- Additionally, the menu offering lacked variety and appeared outdated compared to competitors.
Recognising the need for change, Tebay Southbound was identified as the ideal site to pilot the new food vision and style. The building’s layout allowed for a reconfiguration without major structural work, making it a practical and cost-effective choice for testing improvements.
On Saturday, 3rd May, four new food stations were launched alongside the existing Quick Kitchen. A significant step forward in enhancing service efficiency, menu diversity, and customer satisfaction.
Its early days but we’re off to a very positive start with the new kitchen stations:
- During May, Tebay South Kitchen achieved record weekly sales of £120,550, setting a new benchmark across all MSA kitchen sites.
- This breaks the previous Tebay South record of £92.7k, set in September 2023.
- It also outperforms the previous business-wide record of £113,258, held by Gloucester North.
This early success highlights the strong potential of the new kitchen model. We are now entering a refinement phase, preparing to fine tune ready for the summer trading period with a particular focus on the hot sandwich station.
