SWOT - Bakery

 
Coffee, Pastries & Cake with some items baked off on site, improving quality while showcasing that we are bakers.
 
Opening Hours: 7am – 10pm
 
Serving our customers looking for a ‘coffee break’ mission. During May Bakery station made up 16% of Tebay south catering sales.
 
87 Transactions per hour have been achieved on this station against predictions of 60.
 
 

Strengths

  • Hot drink quality and consistency.
  • Team engagement
  • Crockery is very strong
  • Achieving above the business case of 60 transactions per hour.
 

Weaknesses

  • Average spend is prohibitive on this station driven by the product range – coffee and cakes.
 
 

Opportunities

  • Increase sales through improved range and quality of cakes.
  • Increase sales through additional non coffee based drinks – eg matcha
 

Threats

  • Average spend per transaction is lower than other stations.

 

SWOT - Deli

 
Sandwiches, Salads & Juice, compliments the other stations in offering a colorful & lighter option. A ‘healthier indulgence’ and a mix and match approach to menus that meets many dietary needs without compromising flavor or quality.
 
Opening Hours: 11am – 3pm
 
Serving our customers looking for a ‘lunch’ mission. During May Deli station made up 8% of Tebay south catering sales.
 
56 Transactions per hour have been achieved on this station against predictions of 45.
 

Strengths

  • Visual & Fresh Food
  • Salads are prepared front of house, showcasing our craft.
  • High average spend per transaction.
  • Achieving above the business case of 45 transactions per hour.

Weaknesses

  • Station is too small, often the space is looking cluttered and hard to operate.
 
 

Opportunities

  • Cold & Hot drink sales could be improved – additional range of fresh juices launching in June.
  • We need to change the counter to chilled to maximise the opening hours and reduce wastage.

SWOT - Kitchen

 
Cooked Breakfasts, Roasts & Bakes, Roasted meats at the centre, traditional full plated meals including breakfast. Our heritage with a strong link to butchery. Something only we can do on the motorway and a true hero area. Westmorland at its best.

Serving our customers looking for a ‘food’ mission. During May, Kitchen station made up 27% of Tebay south catering sales.
 
62 Transactions per hour have been achieved on this station against predictions of 45.
 

Strengths

  • Customers continue to love our cooked breakfasts and hot food.
  • Full cooked breakfasts, Roast brisket & fish + Chip meals driving sales.
  • Smaller portions, have been well received by our customers.
  • High average spend per transaction

Weaknesses

  • Requires a high number of colleagues to operate – both front and back of house.
  • Hotplate isn’t big enough for ease of use.
  • Food Temp – the hanging lights just aren’t strong enough.
  • Customer feedback being received around options for gravy with brisket meal.
  • Children's food just isn’t obvious.
  • Poor sales of waffles at breakfast time.
 

Opportunities

  • Simplified menu would allow for better quality products and faster service.
  • Increase uptake of hot & cold drinks.
  • We are increasing the hot plate size.
