Project Aims


 
At Tebay Southbound, we set out to reinvent our kitchen space, laying the groundwork for the future of our food offer. Our goal was to elevate the quality, distinctiveness, and consistency of our food, ensuring it meets our customers expectations.
 
We also identified a significant commercial opportunity: by enhancing our food offer, expanding the range of options, and improving customer flow during peak times, we aimed to increase conversion rates and transactions representing a potential £1.2 million sales opportunity.
 
To achieve this, we introduced five distinct food stations, each designed around a unique offer and tailored to different customer missions. These stations would help disperse footfall more effectively, reduce queues, improve food quality and improve the overall customer journey.
 
Key improvements included / will include:
  • Clearer customer navigation, enabling quicker and more confident purchasing decisions.
  • Upgraded back-of-house facilities, including kitchens, dishwashing areas, sandwich rooms, and the Westmorland Kitchen, to support the new service model.
  • Enhanced foyer space and refreshed toilet facilities, contributing to a more welcoming and comfortable customer experience.

Key Aims & Objective of the Project:

 

FOOD: Delivering an improved, and distinctive food offer in our Kitchens built around our food vision covering quality, craft, and provenance:

  • Made from scratch using whole ingredients.
  • Rooted in our values, highlighting our difference through our meat, showing that we are ‘makers’ and our connection to growers and producers.
  • Delivered through a series of focused outlets, each working independently yet cohesively to bring our food vision to life, showcasing our principles of well-loved favorites, celebrating our heritage and presented with a contemporary feel.
  • Each station will feature a tight, curated range to ensure consistently high product quality.
 

OPERATIONS: Our operational model is designed to increase conversion rates and enhance the customer experience.

  • Dispersing customers across multiple transaction points to reduce queues and speed up service.
  • Meeting a broader range of food needs through a more diverse and appealing offer.
  • Ensuring each station operates as a fully self-sufficient unit each with dedicated equipment, ingredients, and tools to support independent operation.
 

DESIGN: The design of Tebay Southbound will reflect our identity and values.

  • Inviting and efficient, maximizing customer flow while preserving the unique Westmorland atmosphere.
  • Deeply connected to place, with design choices that reflect our landscape, heritage, and ethos.
  • Craft-led in every detail—from architecture and interiors to signage and graphics, with thoughtful attention to technique and application.
