1. Summer Trading Focus
• Optimise and trade the site over the summer period.
• Push boundaries to explore the full sales potential of the new stations model.
• Optimise our margin position on each station
 

2. Improve the Hot Sandwich station
• This station is not working in clearly showing its offer due to the food not being visible. We want to focus on the visual aspect prior to reverting to digital or kiosk solutions. Five Guys and other operators have managed to achieve this challenge.
• Waffles and some other breakfast items will also be added to improve the day-part split.
• Review trading hours of quick kitchen/pie shop, to drive sales to this station.
• Review the use of aluminum trays.

3. Labour & Efficiency
• Continuously review labour costs and station-level efficiency, Balancing operational effectiveness with sales growth. Including a review of opening times of each station.
• Budget wage margin for next year is currently at 23.7% but averages out across both sites to 21.8%, equaling Gloucester.

4. Quick Kitchen Redevelopment
• Replace the Quick Kitchen with a new ‘Pie Shop’ station, applying learnings around: Clear, defined product ranges that compliment the other stations, rather than repetition.
• Reviewing labour deployment and operating hours

5. Operational Enhancements
• Review equipment and layout of the Kitchen station to improve efficiency and service flow.
• Evaluate the bakery range and quality to drive increases to the number of items per basket, average spends and transactions

6. Experience
• Improve seating area & foyer lighting to complete the experience.
• Address dining room and condiment areas.
• Exploring Toilet refurbishment options

7. Feasibility

• Conduct a feasibility study to assess how the changes at Tebay South could be implemented into a site at Gloucester
